My brother's birthday was last week, and he got to come home this weekend to celebrate! He and I love BBQ, and we are considering a smoker that is a "dream". Since we were talking about BBQ last week, he thought it would be awesome to have something cooked in the smoker this weekend. I smoked some BBQ pork shoulders yesterday along with some ribs. Greg also asked for some lemon bars, and I made some for him in his birthday gift from me - a Fiestaware 9x13 casserole pan. I have been a collector for 20 years now, and let's just say it's a mild addiction. :-) I DO make most of my purchases at their factory store in WV, though, and many pieces have been bought for me by my mom over the years. I have enough pork left for some pulled pork pizzas this weekend...Greg, wish you could come back up for those! I posted the recipe for lemon bars that I have used since I was a beginning baker. I have made other recipes for lemon bars over the years, but this recipe always tastes better. It's a great recipe for someone who is new to baking, too. (hint, hint to those who read who avoid baking). I added a twist by topping them with some fresh and toasted coconut. YUM!
